There are endless possibilities for meat loaf, the ultimate comfort food, with the pantry. This is an awesome, mellow meatloaf that you can make with your pantry stock. It goes great with spicy side dishes. If you want to jazz it up a bit, put some warm spaghetti sauce and some parmesan cheese on top. It you are serving it with a couple of sides that steal the flavor show, (like the marinated tomatoes that will be posted soon) it will blend right in. It doesn’t over power other foods. Enjoy and hand it down!
On another note, I love the Weight Watchers Simply Filling eating plan. This would fit by eliminating the bacon, using fat free cheese, and making your own bread crumbs out of high fiber,whole wheat bread. I would use a couple of points and have the cheese and bacon. It is such a small amount.
I use 93% lean ground meat.
That is just one slice of bacon cut in half.
