The Glory of That Little “Pea”

I have a huge crush on roasted chick peas. I can’t get enough of them lately. By simply throwing them on a cookie sheet, mixing them with olive oil and salt, and cooking at 400 degrees for 15 minutes or so, they are completely transformed into a savory, satisfying nugget. They have this awesome crunch and tender center. Yummy yummy. I throw them in salads, put them on tortillas with sliced avocados, and sometimes just eat them “as is.”

There are two things I can't resist; an old recipe handed down and passed around, and the beach. Growing up in the midwest I was introduced to true comfort food but always dreamed of a different landscape, and climate. Recently I acquired a 50 year old beach house. While stumbling after the great cooks of my past, I am focused on a future with cool waves and gently breezes......and watermelon rind pickles of course!

    do you use canned chickpeas?

    • Yes I do. BUT now i am reading so much stuff about BP-A in cans that i bought some dried ones and I am going to try them out. Trying to not buy canned stuff. Canada has banned it as toxic to humans but we keep using it……. makes you think.
