This is a great simply filling friendly dish that can be made with the ingredients in the pantry set up. Use any whole wheat pasta that you keep stocked; penne, bowtie, whatever. It is shown here with whole wheat orzo. It never lasts more than a day in my house.
1/4 C champagne vinegar
1/4 C olive oil
1 tsp lemon juice
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 C each of red pepper, red onion, and cherry tomatoes
2 T basil chopped
4 C cooked pasta
Whisk the first five ingredients together. Throw in the rest of the ingredients and refrigerate for at least 2 hours.
Great additions would be artichoke hearts, crushed red pepper, fresh garlic, or feta cheese.
